Pulled Pork Mac and Cheese

1 lb elbow macaroni

2 cups pulled pork (cooked, preferably smoked)

4 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup milk

1 cup heavy cream

1/2 cup unsalted butter

1/4 cup all-purpose flour

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional for topping)

Fresh parsley (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1-2 minutes, stirring constantly, until the mixture is bubbly and golden.

      Add Cream & Milk: Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Continue to whisk until the mixture thickens (about 3-5 minutes).

        Flavor the Sauce: Stir in the Dijon mustard, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

          Incorporate the Cheese: Remove the saucepan from heat and add the sharp cheddar and Monterey Jack cheeses, stirring until completely melted and smooth.

            Combine with Pasta and Pulled Pork: In a large mixing bowl, combine the cooked macaroni and pulled pork. Pour the cheese sauce over the mixture and stir until everything is evenly coated.
