Pork Chops and Potatoes Casserole

4 bone-in pork chops (about 1 inch thick)

4 medium potatoes, thinly sliced

1 cup of diced onions (about 1 large onion)

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

2 cups shredded cheddar cheese

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Brown the Pork Chops: In a large skillet over medium-high heat, add the olive oil. Season the pork chops with salt, pepper, and paprika. Brown the pork chops on both sides for about 3-4 minutes each, until they're nicely seared. Remove from skillet and set aside.

      Sauté Onions and Garlic: In the same skillet, add the diced onions and garlic. Sauté until the onions are translucent, about 3-5 minutes. Stir in the thyme, and remove from heat.

        Prepare the Potatoes: In a large mixing bowl, layer the thinly sliced potatoes. Season with a pinch of salt and pepper.

          Combine Cream and Broth: In a separate bowl, whisk together the heavy cream and chicken broth until well combined.

            Layer the Casserole: In a greased 9x13 inch casserole dish, start by placing half of the sliced potatoes at the bottom. Evenly spread half of the sautéed onion and garlic mixture, then half of the shredded cheese. Place the browned pork chops on top, followed by the remaining potatoes, onions, and another layer of cheese. Finally, pour the cream and broth mixture evenly over the entire dish.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 20-25 minutes, or until the potatoes are tender and the cheese is bubbly and golden.

                Garnish and Serve: Once baked, allow the casserole to cool for a few minutes. Garnish with chopped fresh parsley before serving.
