Ingredients
  

For the Dough:

2 ½ cups all-purpose flour

1 tsp salt

1 tsp sugar

1 packet (2 ¼ tsp) active dry yeast

1 cup warm water (110°F)

2 tbsp olive oil

For the Topping:

1 cup mozzarella cheese, shredded

½ cup fontina cheese, shredded

1 cup mushrooms (cremini or shiitake), sliced

2 tbsp olive oil

1 clove garlic, minced

1 tbsp fresh thyme leaves (or ½ tbsp dried thyme)

2 tbsp truffle oil (to taste)

Salt and pepper, to season

Fresh arugula, for garnish (optional)

Grated Parmesan, for topping (optional)

Instructions
 

Prepare the Dough:

    - In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

      - In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

        - Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover with a damp cloth, and allow to rise in a warm place for 1 hour, or until doubled in size.

          Prepare the Topping:

            - In a pan over medium heat, add 2 tbsp olive oil and sauté the minced garlic until fragrant (about 1 minute).

              - Add the sliced mushrooms and thyme, cooking until mushrooms are softened and lightly browned. Season with salt and pepper, then remove from heat.

                Assemble the Pizza:

                  - Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

                    - Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness (about 12-inch round).

                      - Carefully transfer the rolled dough to a parchment paper (for easy handling) or directly onto the hot pizza stone/baking sheet.

                        - Spread the sautéed mushroom mixture evenly over the dough, then sprinkle mozzarella and fontina cheese generously on top. Drizzle with truffle oil.

                          Bake the Pizza:

                            - Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and the cheese is bubbling and slightly browned.

                              Finishing Touches:

                                - Remove the pizza from the oven and, if desired, top with fresh arugula and grated Parmesan.

                                  - Let it cool for a few minutes, then slice and serve immediately.
