2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup fresh pineapple, diced (or 1 cup canned pineapple, drained)

1 bell pepper (red or yellow), sliced

1 small red onion, sliced

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

½ cup low-sodium soy sauce

¼ cup brown sugar

2 tablespoons rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

1 tablespoon vegetable oil

2 cups cooked rice (white or brown)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, brown sugar, rice vinegar, minced garlic, and ginger. Add the chicken pieces, ensuring they are well coated. Marinate for at least 30 minutes (or up to 2 hours) in the refrigerator.

    Prepare the Stir-Fry: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken (reserve the marinade) and stir-fry until slightly browned and cooked through, about 5-7 minutes.

      Add Vegetables: Add the sliced bell pepper and onion to the skillet with the chicken. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.
