Pineapple Chicken and Rice

1 lb (450g) chicken breast, diced

1 cup fresh pineapple chunks (or canned, drained)

1 cup jasmine rice

2 cups chicken broth

1 medium red bell pepper, diced

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon olive oil

1 teaspoon ground ginger

½ teaspoon black pepper

½ teaspoon salt

1 tablespoon honey (optional for sweetness)

Green onions, chopped (for garnish)

Fresh cilantro leaves (for garnish)

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken with soy sauce, oyster sauce (if using), ground ginger, black pepper, and honey (if using). Mix well and let it marinate for at least 15 minutes while preparing other ingredients.

    Cook the Rice: Rinse jasmine rice under cold water until the water runs clear. In a pot, bring 2 cups of chicken broth to a boil. Add the rinsed rice, cover, and reduce heat to low. Cook for 15-18 minutes or until the rice is tender and all the liquid is absorbed. Remove from heat and let it sit covered.

      Sauté Vegetables: In a large skillet or wok, heat olive oil over medium heat. Add chopped onion and sauté for about 2-3 minutes until translucent. Then add minced garlic and diced red bell pepper; cook for an additional 2 minutes until softened.

        Cook Chicken: Push the vegetables to one side of the skillet, and add the marinated chicken to the empty side. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

          Combine Ingredients: Once the chicken is cooked, add the pineapple chunks to the skillet. Stir everything together and cook for another 3-4 minutes, allowing the flavors to meld and the pineapple to heat through.

            Fluff Rice: Open the lid of the rice pot and fluff it with a fork. Add the prepared rice to the skillet with the chicken and pineapple mixture. Gently toss everything together to combine well.

              Garnish & Serve: Transfer the Pineapple Chicken and Rice to a serving dish. Garnish with chopped green onions and fresh cilantro leaves. Serve hot and enjoy!
