1 cup grated carrots (about 2 medium carrots)

1 cup crushed pineapple, drained

½ cup chopped walnuts or pecans (optional)

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 tsp vanilla extract

2 tbsp fresh orange juice (optional, for a zesty flavor)

Zest of 1 orange (optional, for extra flavor)

For Garnish:

Additional chopped walnuts or pecans

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

      Prepare Wet Ingredients: In a large mixing bowl, combine the vegetable oil and granulated sugar. Beat with an electric mixer on medium speed until well blended. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

        Combine Ingredients: Gradually add the dry mixture into the wet mixture, mixing until combined. Fold in the grated carrots, crushed pineapple, and nuts (if using).
