1 cup sharp cheddar cheese, grated

1 cup cream cheese, softened

1/2 cup diced pimentos (drained)

1/4 cup mayonnaise

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (optional)

Salt and pepper, to taste

For the Burgers:

1.5 lbs ground beef (80/20 blend recommended)

1 teaspoon Worcestershire sauce

1 teaspoon smoked paprika

Salt and pepper, to taste

4 hamburger buns

Lettuce and sliced tomatoes for garnish

Pickles for serving (optional)

Instructions
 

Prepare the Pimento Cheese:

    - In a medium bowl, combine the grated sharp cheddar, softened cream cheese, diced pimentos, mayonnaise, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper.

      - Mix until well combined and cream cheese is smooth. Set aside in the refrigerator to chill while preparing the burgers.

        Make the Burger Patties:

          - In a large bowl, combine the ground beef, Worcestershire sauce, smoked paprika, salt, and pepper.

            - Gently mix just until combined (do not overwork the meat).

              - Divide the mixture into 8 equal portions (about 6 ounces each). Flatten each portion into a thin patty.

                Stuff the Burgers:

                  - On four of the patties, place about 2 tablespoons of the chilled pimento cheese mixture in the center.

                    - Top with the remaining four patties, sealing the edges tightly to make sure the filling doesn’t escape during cooking.

                      Cook the Burgers:

                        - Preheat a grill or stovetop skillet over medium-high heat.

                          - Cook the stuffed burgers for about 4-5 minutes on each side, or until they reach an internal temperature of 160°F (71°C) for medium doneness.

                            - If desired, add cheese slices on top during the last minute of cooking to melt.
