12-15 potato and cheese pierogis (fresh or frozen)

2 cups marinara sauce

1 cup sour cream

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried parsley

1 tablespoon olive oil

1 large onion, diced

2 cups shredded cabbage (optional)

Salt and pepper to taste

Fresh chives or green onions for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and shredded cabbage (if using). Sauté until the onion is translucent and the cabbage has softened, about 5-7 minutes. Season with salt, pepper, garlic powder, and onion powder. Remove from heat.

      Prepare the Cheese Mixture: In a mixing bowl, combine the sour cream, half of the mozzarella cheese, and half of the cheddar cheese. Mix until well combined and set aside.

        Layer the Lasagna: In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Add a layer of pierogis on top of the sauce. Spoon some of the sautéed vegetable mixture over the pierogis, followed by a layer of the cheese mixture. Drizzle some marinara sauce over the cheese mixture.

          Repeat Layers: Repeat the layering process (sauce, pierogis, veggies, cheese mixture) until all ingredients are used up, finishing with a layer of marinara sauce on top.

            Top with Cheese: Sprinkle the remaining mozzarella and cheddar cheese evenly over the top layer of marinara sauce.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let it sit for about 10 minutes before slicing. Garnish with fresh chives or green onions, and serve warm.
