Pesto Chicken Stuffed Potatoes

4 large russet potatoes

1 cup cooked chicken, shredded (rotisserie chicken works great)

1/2 cup basil pesto

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish

Preheat your oven to 400°F (200°C).

    Scrub the russet potatoes under running water, then pat them dry. Pierce each potato several times with a fork to allow steam to escape during baking.

      Rub the potatoes with olive oil, and sprinkle them generously with salt. Place them on a baking sheet and bake for 45-60 minutes, or until the skin is crisp and a fork pokes through easily.

        While the potatoes are baking, prepare the filling. In a mixing bowl, combine the shredded chicken, basil pesto, cream cheese, mozzarella cheese, and half of the Parmesan cheese. Mix thoroughly until well combined. Season with salt and pepper to taste.

          Once the potatoes are cooked, remove them from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise and carefully scoop out some of the flesh, leaving a 1/4-inch border to maintain the structure.

            Mix the scooped potato flesh into the chicken and pesto mixture until smooth and creamy.

              Generously spoon the pesto chicken filling back into the potato halves, packing it in well. Top each stuffed potato with the remaining Parmesan cheese.

                Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                  Once out of the oven, let them cool slightly. Garnish with fresh basil leaves before serving.
