1 cup polenta (coarse cornmeal)

4 cups vegetable broth (or water)

3 tablespoons unsalted butter

4 cloves garlic, minced

1 cup freshly grated Parmesan cheese

1 teaspoon black pepper (adjust to taste)

1/2 teaspoon salt (or to taste)

Fresh herbs (such as parsley or basil), for garnish

Optional: red pepper flakes for extra heat

Instructions
 

In a medium saucepan, bring the vegetable broth (or water) to a boil over medium-high heat.

    Slowly whisk in the polenta, ensuring no lumps form.

      Reduce the heat to low and cook the polenta for about 30-40 minutes, stirring often. Make sure it doesn’t stick to the bottom of the pan.

        Meanwhile, in a small skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 2-3 minutes until fragrant but not browned.

          Once the polenta has thickened and is creamy, stir in the sautéed garlic and butter mixture, along with the grated Parmesan cheese, black pepper, and salt. Mix well until the cheese is fully melted and incorporated.

            Taste and adjust seasoning if necessary. For a bit of heat, sprinkle in some red pepper flakes.

              Remove from heat and let the polenta sit for a few minutes to set slightly before serving.

                To serve, spoon the polenta onto plates, garnish with fresh herbs, and additional Parmesan if desired.
