Ingredients

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1/2 cup unsalted butter, melted

1/2 cup maple syrup

1 teaspoon vanilla extract

1 cup pecans, roughly chopped

1/4 cup mini chocolate chips (optional)

Whipped cream or vanilla ice cream for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease with non-stick spray.

Combine Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In another bowl, whisk together the egg, melted butter, maple syrup, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently stir with a spatula until just combined. Be careful not to overmix; a few lumps are fine.

Add Pecans and Chocolate Chips: Fold in the chopped pecans and mini chocolate chips (if using) until evenly distributed throughout the batter.

Fill Muffin Pan: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Cool: Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Serve: Enjoy the muffins warm or at room temperature, topped with whipped cream or a scoop of vanilla ice cream if desired.
