Peanut Butter Pretzel Chocolate Chip Cookies

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup chocolate chips (semi-sweet or dark)

1 cup mini pretzels, roughly chopped

Sea salt for sprinkling (optional)

Instructions
 

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, creamy peanut butter, brown sugar, and granulated sugar using a hand mixer or stand mixer. Beat until the mixture is light and fluffy, about 2-3 minutes.

      Add the egg and vanilla extract to the mixture, and continue to mix until fully combined.

        In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

          Fold in the chocolate chips and chopped mini pretzels using a spatula. The dough will be thick and chunky.

            Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets, leaving about 2 inches of space between each cookie. You can flatten them slightly for a more even bake.

              If desired, sprinkle a small pinch of sea salt on top of each cookie dough ball for an extra flavor boost.

                Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked. They will continue to cook on the baking sheet after removing them from the oven.

                  Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
