Crust:

2 cups crushed pretzels

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

Cheesecake Filling:

16 oz (2 packages) cream cheese, softened

1 cup creamy peanut butter

1 cup powdered sugar

2 large eggs

1 teaspoon vanilla extract

Topping:

1 cup chopped peanut butter cups (such as Reese's)

1/2 cup semi-sweet chocolate chips

1/2 cup whipped cream or whipped topping (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper, allowing it to hang over the sides for easy removal later.

    Prepare the Crust: In a mixing bowl, combine the crushed pretzels, melted butter, and granulated sugar. Mix until well combined. Press this mixture firmly into the bottom of the prepared baking dish. Bake for 10 minutes, then let it cool.

      Make the Cheesecake Filling: While the crust cools, in a large bowl, beat the softened cream cheese and peanut butter together using an electric mixer until smooth and creamy. Gradually add the powdered sugar and mix until well incorporated.

        Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract until everything is combined and smooth.

          Assemble the Bars: Pour the cheesecake filling over the cooled pretzel crust, spreading it evenly. Sprinkle the chopped peanut butter cups evenly over the top of the cheesecake layer.

            Bake: Bake the cheesecake bars in the preheated oven for 30-35 minutes, or until the center is set and slightly jiggly. Remove from the oven and allow it to cool completely at room temperature. For best results, refrigerate the cheesecake bars for at least 4 hours, or overnight.

              Prepare Chocolate Topping: In a microwave-safe bowl, melt the semi-sweet chocolate chips in 30-second intervals, stirring after each interval until smooth.

                Finish the Bars: Once the cheesecake is set and chilled, pour the melted chocolate over the top, spreading it evenly. If using, top with whipped cream dollops.

                  Slice and Serve: Once the chocolate is set, lift the bars out of the pan using the parchment overhang. Cut into squares or rectangles, and serve chilled.
