Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1 cup chocolate chips

1/2 cup chopped peanuts (optional, for added crunch)

1/2 cup powdered sugar (for dusting)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Cream the Butters: In a large mixing bowl, combine the creamy peanut butter and softened unsalted butter. Using an electric mixer, beat the mixture until it becomes light and fluffy, which should take about 2-3 minutes.

Add Sugars: Gradually add the brown sugar and granulated sugar to the butter and peanut butter mixture. Continue to mix until well combined and fluffy.

Incorporate Egg and Vanilla: Scrape down the sides of the bowl, then add the egg and vanilla extract. Beat until fully integrated.

Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and all-purpose flour. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix!

Fold in Chocolate Chips & Peanuts: Gently fold in the chocolate chips and, if desired, the chopped peanuts for an extra crunch.

Shape the Dough: Using a cookie scoop or your hands, form the dough into balls about 1.5 inches in diameter and place them on the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked; they'll continue to cook as they cool on the baking sheet.

Cool & Dust: Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely. Once cooled, dust with powdered sugar for a touch of sweetness.

Serve & Enjoy: These Peanut Butter Bomb Cookies are best enjoyed warm when the chocolate is still melty. Store any leftovers in an airtight container at room temperature for up to a week (if they last that long!).
