Ingredients

1 cup rolled oats

1/2 cup unsweetened peanut butter

1/2 cup honey or maple syrup

1 medium apple, peeled and diced

1/2 cup chopped nuts (walnuts or almonds)

1/4 cup dried cranberries or raisins

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 teaspoon vanilla extract

1/4 cup protein powder (optional for extra boost)

Instructions

Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, dried cranberries (or raisins), protein powder (if using), cinnamon, and salt. Mix well.

Prepare Wet Ingredients: In a separate bowl, mix the peanut butter, honey (or maple syrup), and vanilla extract until well combined and smooth.

Mix Together: Add the wet mixture to the dry ingredients and stir until fully combined. Fold in the diced apple gently until evenly distributed.

Transfer to Baking Dish: Pour the mixture into the prepared baking dish and press it down firmly to ensure the mixture is compact and even.

Bake: Place in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown.

Cool and Slice: Remove the dish from the oven and let it cool for about 10 minutes. Use the overhanging parchment to lift the bars out, then let them cool completely on a wire rack. Once cool, slice into bars of your desired size.

Store: Store in an airtight container in the refrigerator for up to a week. You can also freeze them for longer storage!
