Peach Veggie Stir Fry

2 ripe peaches, pitted and sliced into wedges

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 medium zucchini, julienned

1 cup snap peas, trimmed

2 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons soy sauce (or tamari for gluten-free)

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon honey (or agave syrup for vegan option)

Salt and pepper to taste

2 tablespoons chopped fresh basil (optional)

Cooked brown rice or quinoa, for serving

Toasted sesame seeds, for garnish

Instructions
 

Prep the Vegetables: Wash and slice all vegetables as instructed. Set aside.

    Make the Sauce: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, and honey. Adjust the sweetness as needed.

      Heat the Pan: In a large skillet or wok, heat a tablespoon of sesame oil over medium-high heat.

        Sauté Aromatics: Add minced garlic and ginger to the pan. Stir-fry for about 30 seconds until fragrant but not browned.

          Stir Fry the Veggies: Add the sliced peppers and snap peas. Stir-fry for 3-4 minutes until just tender but still vibrant in color.

            Add Zucchini and Peaches: Gently toss in the julienned zucchini and peach wedges. Cook for another 2-3 minutes, letting the peaches warm and soften slightly.

              Coat with Sauce: Pour in the sauce mix and toss everything together, ensuring all ingredients are well-coated. Cook for an additional 2 minutes until heated through.

                Season: Taste and season with salt and pepper as needed. Remove from heat.

                  Serve: Spoon the stir-fry over cooked brown rice or quinoa. Garnish with fresh basil and toasted sesame seeds for an added crunch.
