4 bone-in, skin-on chicken thighs

2 ripe peaches, pitted and diced

1/2 cup peach preserves

2 tablespoons soy sauce

2 tablespoons apple cider vinegar

1 tablespoon fresh ginger, grated

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 tsp dried thyme)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh mint for garnish (optional)

Marinate the Chicken: In a large bowl, combine the peach preserves, soy sauce, apple cider vinegar, grated ginger, minced garlic, and thyme. Mix well. Season the chicken thighs with salt and pepper, then add them to the marinade. Allow the chicken to marinate for at least 30 minutes (up to 2 hours in the refrigerator for more flavor).

    Prepare For Cooking: Preheat your grill or oven. If using a grill, preheat to medium-high heat. If using an oven, preheat to 400°F (200°C).

      Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Remove the chicken thighs from the marinade, letting excess liquid drip off, and carefully place them skin-side down in the skillet. Sear for 5-7 minutes until the skin is golden brown and crispy.
