Peach Cobbler Overnight Oats

1 cup rolled oats

1 ½ cups almond milk (or milk of choice)

1 ripe peach, diced (fresh or canned)

1 tablespoon honey or maple syrup

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon nutmeg

¼ cup Greek yogurt (optional for creaminess)

2 tablespoons chopped pecans or walnuts

1 tablespoon brown sugar (optional, for added sweetness)

Fresh peach slices and mint leaves for garnish

Instructions
 

In a mixing bowl, combine the rolled oats, almond milk, honey or maple syrup, and vanilla extract. Stir until well combined.

    Add in the diced peach, ground cinnamon, and nutmeg. Mix gently to incorporate the flavors without breaking up the peach too much.

      If you’re using Greek yogurt, gently fold it into the oat mixture for added creaminess.

        Transfer the mixture into a jar or airtight container, ensuring it’s tightly sealed.

          Sprinkle the chopped nuts and brown sugar (if using) on top of the oats for an added crunch and sweetness.

            Chill the mixture in the refrigerator overnight (or for at least 6 hours) to allow the oats to soak and absorb the flavors.
