Oven Roasted Cauliflower Tacos

1 large head of cauliflower, cut into florets

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

8 small corn or flour tortillas

1 avocado, sliced

1 cup red cabbage, finely shredded

1/2 cup fresh cilantro, chopped

Lime wedges, for serving

Optional: hot sauce or salsa for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Cauliflower: In a large bowl, combine the cauliflower florets, olive oil, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper, salt, and pepper. Toss until the cauliflower is well coated.

      Roast the Cauliflower: Spread the seasoned cauliflower on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until tender and golden brown, tossing halfway through for even roasting.

        Warm the Tortillas: While the cauliflower is roasting, wrap the tortillas in aluminum foil and place them in the oven for the last 5-10 minutes of the roasting time to warm up.

          Assemble the Tacos: Once the cauliflower is done, remove it from the oven. On each warm tortilla, add a few spoonfuls of roasted cauliflower, followed by a generous spoonful of black beans, a sprinkle of corn, shredded red cabbage, and avocado slices.

            Garnish and Serve: Top each taco with fresh cilantro and a drizzle of your favorite hot sauce or salsa. Serve with lime wedges on the side for an extra burst of flavor.
