Ingredients

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

For the Dipping Sauce:

1/2 cup Greek yogurt or sour cream

1 tablespoon honey

1 tablespoon lime juice

1 teaspoon chili powder

Salt to taste

Instructions

Preheat the oven: Preheat your oven to 425°F (220°C).

Prepare the sweet potatoes: Wash and peel the sweet potatoes. Cut them into thin strips, aiming for uniform thickness to ensure even cooking.

Season the fries: In a large bowl, combine the sweet potato strips with olive oil, paprika, garlic powder, cayenne pepper, salt, and black pepper. Toss well until all fries are evenly coated with the seasoning mixture.

Arrange on a baking sheet: Spread the fries in a single layer on a baking sheet lined with parchment paper. Avoid overcrowding as this will prevent the fries from getting crispy.

Bake the fries: Bake in the preheated oven for about 25-30 minutes, flipping the fries halfway through for even crispiness. Keep an eye on them towards the end to avoid burning.

Prepare the dipping sauce: While the fries are baking, mix together the Greek yogurt (or sour cream), honey, lime juice, chili powder, and a pinch of salt in a small bowl. Adjust the seasoning to your taste.

Serve: Once the fries are golden brown and crispy, remove them from the oven and let them cool for a few minutes. Serve warm with the sweet and spicy dipping sauce on the side.
