4 salmon fillets (6 oz each)

1 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

2 tablespoons fresh dill, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh lemon zest

2 tablespoons Dijon mustard

2 tablespoons olive oil

Juice of 1 lemon

Salt and pepper, to taste

Lemon wedges, for serving

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Crust Mixture: In a mixing bowl, combine breadcrumbs, grated Parmesan cheese, dill, parsley, and lemon zest. Drizzle in the olive oil and mix until the ingredients are evenly coated and crumbly. Set aside.

      Season the Salmon: Place the salmon fillets on the prepared baking sheet. Season each fillet with salt and pepper to taste. Brush the top of each fillet with Dijon mustard, ensuring an even coating.
