Ingredients

1 pound potato gnocchi

2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional)

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions

Cook the Gnocchi: In a large pot of boiling salted water, cook the potato gnocchi according to package instructions until they float to the surface. Drain and set aside.

Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic, Italian seasoning, and crushed red pepper flakes, cooking for an additional 1-2 minutes until fragrant.

Add Tomatoes and Spinach: Add the cherry tomatoes to the skillet, cooking for about 5 minutes until they soften and release their juices. Add the fresh spinach and stir until wilted.

Make it Creamy: Pour in the heavy cream, stirring to combine. Bring the mixture to a simmer, then mix in the grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

Combine Gnocchi: Gently fold the cooked gnocchi into the creamy sauce, allowing them to heat through for about 2-3 minutes.

Serve with Garnish: Remove from heat, and optionally garnish with fresh basil. Serve immediately in bowls, and enjoy the vibrant flavors!
