8 oz (225 g) fettuccine or pasta of your choice

2 tablespoons olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

8 oz (225 g) cremini or button mushrooms, sliced

1 teaspoon dried thyme

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, for heat)

4 cups vegetable broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley or basil for garnish

Sauté the Aromatics:

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Cook the Mushrooms:

        Add the sliced mushrooms to the pot, along with the thyme, oregano, and red pepper flakes (if using). Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.

          Combine Pasta and Broth:

            Pour in the vegetable broth and bring the mixture to a boil. Once boiling, add the pasta. Stir well to make sure the pasta is submerged. Reduce the heat to medium-low and cover the pot, allowing it to simmer for about 10-12 minutes, or until the pasta is cooked to al dente, stirring occasionally to prevent sticking.

              Create the Creamy Sauce:

                Once the pasta is cooked, stir in the heavy cream and grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.

                  Garnish and Serve:

                    Remove from heat, and garnish with freshly chopped parsley or basil. Serve immediately, offering extra Parmesan cheese on the side if desired.
