1 lb ground beef (or turkey for a healthier option)

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14 oz) black beans, drained and rinsed

1 can (14 oz) diced tomatoes (with juices)

1 cup corn (frozen or canned)

1 tablespoon taco seasoning (store-bought or homemade)

1 cup uncooked rice (white or brown)

2 cups chicken or vegetable broth

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Sour cream (for serving)

Instructions
 

Cook the Meat: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef (or turkey) and cook until browned, breaking it apart with a spatula. Drain any excess fat.

    Sauté Aromatics: Add the diced onion, bell pepper, and garlic to the skillet. Sauté for about 3-5 minutes, or until the vegetables are softened and the onion is translucent.

      Combine Ingredients: Stir in the black beans, diced tomatoes (with juices), corn, and taco seasoning. Mix well to combine all ingredients.

        Add Rice and Broth: Add the uncooked rice to the mixture, then pour in the chicken or vegetable broth. Stir everything together and bring the mixture to a gentle boil.

          Simmer: Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 18-20 minutes, or until the rice is cooked and has absorbed the liquid. Stir occasionally to prevent sticking.
