Ingredients

1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1/4 cup olive oil

Juice and zest of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

1/4 cup fresh parsley, chopped

Lemon wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Marinade: In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, red pepper flakes, salt, and black pepper.

Marinate the Shrimp: Add the shrimp to the marinade and toss until they are well coated. Allow them to marinate for about 10-15 minutes while you prepare the asparagus.

Toss the Asparagus: Place the asparagus on a large baking sheet and drizzle with a little olive oil. Season with salt and pepper, and toss to coat evenly.

Combine Shrimp and Asparagus: After marinating, pour the shrimp along with the marinade onto the baking sheet with the asparagus. Spread both out into a single layer to ensure even cooking.

Bake the Dish: Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the shrimp turn pink and opaque and the asparagus is tender but still crisp.

Garnish and Serve: Once done, remove from the oven and sprinkle with fresh parsley. Serve warm with lemon wedges on the side for an extra zesty kick.
