1 pound Italian sausage (mild or spicy, depending on your preference)

1 cup farro, rinsed and drained

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14 oz) diced tomatoes, with juices

2 cups vegetable broth (or chicken broth)

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 cup fresh spinach, roughly chopped

¾ cup shredded mozzarella cheese

Fresh parsley or basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Sausage: In a large oven-safe skillet or pan over medium heat, add the Italian sausage. Break it apart with a spatula and cook until browned, about 5-7 minutes. Remove any excess grease but leave some for flavor.

      Sauté Vegetables: Add the diced onion, garlic, and bell pepper to the same skillet. Sauté for about 3-4 minutes until the vegetables are soft.

        Combine Ingredients: Stir in the rinsed farro, diced tomatoes (with juices), vegetable broth, oregano, basil, red pepper flakes (if using), salt, and pepper. Mix well to combine all ingredients.

          Bake: Bring the mixture to a gentle simmer, then cover the skillet with a lid or aluminum foil. Transfer it to the preheated oven and bake for 30-35 minutes, or until the farro is tender and most of the liquid has been absorbed.

            Add Spinach and Cheese: Remove the pan from the oven and stir in the chopped spinach. Sprinkle the shredded mozzarella cheese on top. Return it to the oven (uncovered) for an additional 10 minutes or until the cheese is melted and bubbly.

              Serve: Remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley or basil if desired. Serve warm and enjoy your delicious one-pan meal!
