1 lb (450g) Italian sausage (mild or spicy, according to preference)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 medium zucchini, sliced

1 cup cherry tomatoes, halved

1 cup broccoli florets

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

2 tbsp olive oil

Fresh parsley for garnish (optional)

Heat the Pan: In a large skillet, heat the olive oil over medium heat. Once hot, add in the Italian sausage. Cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes.

    Sauté the Vegetables: Add the diced onion and minced garlic to the pan. Sauté for about 2-3 minutes until the onion becomes translucent. Then, add the chopped bell pepper, zucchini, cherry tomatoes, and broccoli florets. Sprinkle in the Italian seasoning, paprika, salt, and pepper. Stir well to combine.

      Cook the Veggies: Continue to cook the mixture for another 8-10 minutes, stirring occasionally, until the vegetables are tender but still vibrant. If needed, you can add a splash of water to help steam the vegetables.

        Add the Cheese: Once the veggies are cooked, reduce the heat to low. Sprinkle the shredded cheddar cheese evenly over the top of the skillet. Cover the pan with a lid to allow the cheese to melt, about 2-3 minutes.

          Garnish and Serve: Once the cheese is melted and bubbly, remove the lid. Give the skillet a gentle stir to mix in the cheesy goodness. Garnish with freshly chopped parsley if desired, then serve directly from the pan for an easy and delicious meal!
