Ingredients

1 cup uncooked long-grain white rice

2 cups vegetable broth

2 cups fresh broccoli florets (or 1 cup frozen)

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1/2 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup milk (optional, for creamier texture)

Fresh parsley or green onions for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté the Aromatics: In a large, oven-safe skillet or pan, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add Rice: To the skillet, add the uncooked rice, stirring to combine with the onion and garlic mixture. Toast the rice for 2-3 minutes, allowing it to absorb the flavors.

Combine Ingredients: Pour in the vegetable broth and bring to a gentle boil. Add the dried thyme, paprika, salt, and pepper to taste. Stir gently to combine.

Incorporate Broccoli: Carefully mix in the broccoli florets, ensuring they are evenly distributed in the rice mixture.

Add Cheese: Remove the skillet from heat and stir in half of the cheddar cheese and all of the Parmesan cheese, mixing until melted and well combined. If you desire a creamier casserole, add the milk at this stage.

Bake: Sprinkle the remaining cheddar cheese on top of the casserole. Cover with a lid or aluminum foil and transfer to the preheated oven. Bake for 20-25 minutes.

Uncover and Finish: After 20-25 minutes, remove the cover and bake for an additional 10-15 minutes, or until the rice is fully cooked, the broccoli is tender, and the cheese is bubbly and slightly golden.

Garnish: Once out of the oven, let the casserole sit for a few minutes for easy serving. Garnish with freshly chopped parsley or green onions if desired.

Serve: Scoop generous servings onto plates and enjoy your flavorful, comforting one-pan cheesy broccoli and rice casserole!
