1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 cup uncooked long-grain white rice

1 can (15 oz) diced tomatoes with green chilies

2 cups beef broth

1 cup frozen corn

1 teaspoon chili powder

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro or parsley for garnish (optional)

Cook the Beef: In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat, then add diced onions and minced garlic. Sauté for about 2-3 minutes, until the onions are translucent.
