1 lb ground beef

1 cup long-grain white rice, rinsed

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (14.5 oz) diced tomatoes, with juices

2 cups beef broth

1 cup corn (frozen or canned)

2 cups shredded cheese (cheddar or a blend)

1 tsp paprika

½ tsp cumin

Salt and pepper to taste

2 tbsp olive oil

Fresh parsley (for garnish, optional)

Instructions
 

Sauté the Vegetables: In a large skillet or pan over medium heat, add olive oil. Once hot, add chopped onion and bell pepper. Sauté until softened, about 4-5 minutes. Add minced garlic and cook for another minute until fragrant.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the pan. Cook until browned, breaking it up with a spatula, about 5-7 minutes. Season with salt, pepper, paprika, and cumin.

      Combine: Once the beef has browned, drain excess fat if necessary. Stir in the rinsed rice, diced tomatoes (with their juices), and beef broth. Mix well.

        Add Corn and Cheese: Bring the mixture to a simmer. Once it hits a simmer, add the corn and 1 cup of the shredded cheese, stirring to combine.

          Cook the Casserole: Reduce heat to low, cover the pan, and let it cook for about 18-20 minutes, or until the rice is tender and has absorbed most of the liquid.

            Final Touch: Remove the lid, give it a gentle stir, and sprinkle the remaining cheese on top. Cover again and allow the cheese to melt for about 3-5 minutes.

              Serve: Garnish with freshly chopped parsley, if desired. Serve warm directly from the pan for a cozy, family-style meal.
