Ingredients

1 lb ground beef (or turkey for a leaner option)

1 small onion, diced

2 cloves garlic, minced

2 cups elbow macaroni

4 cups beef broth (or chicken broth)

1 cup milk

1 tablespoon tomato paste

2 teaspoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika (optional, for added flavor)

1 ½ cups shredded cheddar cheese

½ cup sour cream

2 green onions, sliced (for garnish)

Instructions

Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain any excess fat, if necessary.

Sauté Onions and Garlic: Add the diced onion to the skillet and cook for 2-3 minutes until the onion becomes translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Combine Ingredients: Stir in the elbow macaroni, beef broth, milk, tomato paste, Worcestershire sauce, Dijon mustard, salt, black pepper, and smoked paprika (if using). Bring the mixture to a boil.

Cook the Pasta: Reduce the heat to low, cover the skillet, and let it simmer for about 10-12 minutes, or until the macaroni is cooked al dente, stirring occasionally to prevent sticking.

Add Cheesy Goodness: Once the pasta is cooked, remove the skillet from heat. Stir in the shredded cheddar cheese and sour cream until fully melted and incorporated.

Garnish and Serve: Taste the macaroni and adjust seasoning if needed. Serve hot, garnished with sliced green onions for a pop of color and flavor.
