Oatmeal Chocolate Chip Cookie Bars

1 cup (2 sticks) unsalted butter, softened

3/4 cup brown sugar, packed

3/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3 cups old-fashioned oats

1 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a 9x13 inch baking pan with parchment paper for easy removal later.

    Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using a hand mixer or stand mixer until the mixture is light and fluffy (about 2-3 minutes).

      Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated. Scrape down the sides of the bowl to make sure everything is mixed well.

        Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.

          Incorporate Oats: Fold in the oats until evenly distributed throughout the dough. Then gently fold in the chocolate chips and nuts (if using).

            Spread into Pan: Pour the cookie dough into the prepared baking pan, spreading it evenly with a spatula.
