For the Crust:

2 cups Nutter Butter cookies, crushed

1/2 cup unsalted butter, melted

2 tablespoons granulated sugar

For the Peanut Butter Cheesecake Filling:

16 oz cream cheese, softened

1 cup creamy peanut butter

1 cup powdered sugar

1 teaspoon vanilla extract

3 large eggs

For the Topping:

1 cup heavy cream

1/4 cup powdered sugar

1/4 cup creamy peanut butter

Nutter Butter cookies, for garnish

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine the crushed Nutter Butter cookies, melted butter, and granulated sugar. Mix until the crumbs are well coated.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove and allow to cool.

          Make the Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.

              - Add the peanut butter, powdered sugar, and vanilla extract, beat until fully combined and creamy.

                - Incorporate the eggs one at a time, mixing thoroughly after each addition until the batter is smooth.

                  Combine and Bake:

                    - Pour the peanut butter cheesecake filling over the cooled crust, spreading it evenly.

                      - Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. It will firm up as it cools.

                        Cooling Time:

                          - Turn off the oven, crack the oven door, and let the cheesecake cool in there for about an hour.

                            - Afterward, transfer it to the fridge and chill for at least 4 hours or overnight if possible.

                              Prepare the Topping:

                                - In a medium bowl, beat the heavy cream with an electric mixer until soft peaks form.
