1 can (20 oz) crushed pineapple in juice, drained

8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup shredded coconut (sweetened or unsweetened, as desired)

1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

Fresh pineapple slices and mint leaves for garnish (optional)

Instructions
 

Prepare the Crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand. Press the mixture into the bottom of an 8x8-inch dish to form a firm crust. Set aside.

        Combine Ingredients: Gently fold the whipped cream into the cream cheese mixture until well-combined. To this mixture, fold in the drained crushed pineapple and shredded coconut, ensuring everything is evenly distributed.
