Mushroom Stuffed Chicken Breast

4 boneless, skinless chicken breasts

8 oz (225g) cremini or button mushrooms, finely chopped

1 small shallot, finely diced

2 cloves garlic, minced

1 cup fresh spinach, chopped

½ cup cream cheese, softened

½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or ½ tsp dried thyme)

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Toothpicks or kitchen twine

Instructions
 

Prepare the filling: In a large skillet, heat the olive oil over medium heat. Add the diced shallot and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

    Cook the mushrooms: Add the chopped mushrooms to the skillet, season with salt and pepper, and cook for about 5-7 minutes, or until the mushrooms are softened and have released their moisture. Stir in the chopped spinach until wilted, about 2 minutes.

      Mix the filling: Remove the skillet from the heat and let the mixture cool slightly. In a bowl, combine the mushroom mixture with cream cheese, mozzarella cheese, Parmesan cheese, thyme, oregano, and adjust the seasoning with salt and pepper.

        Prepare the chicken: Preheat your oven to 375°F (190°C). Using a sharp knife, cut a pocket in each chicken breast, being careful not to cut all the way through. Season the chicken breasts with salt and pepper.

          Stuff the chicken: Carefully spoon the mushroom filling into each chicken breast pocket. Use toothpicks to secure the opening or tie with kitchen twine to hold the filling inside.

            Sear the chicken: In the same skillet, add a little more olive oil if needed and heat over medium-high. Place the stuffed chicken breasts in the skillet and sear for about 3-4 minutes on each side until golden brown.

              Bake the chicken: Transfer the seared chicken breasts to a baking dish and place in the preheated oven. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).

                Rest and serve: Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
