2 ripe avocados

1 cup mixed mushrooms (e.g., shiitake, cremini, and oyster), sliced

2 tablespoons olive oil

1 garlic clove, minced

1 teaspoon soy sauce (or tamari for gluten-free)

1 tablespoon fresh lemon juice

Salt and freshly cracked pepper, to taste

4 slices of sourdough bread (or your choice of bread)

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Fresh herbs for garnish (e.g., cilantro, parsley, or chives)

Balsamic glaze for drizzling (optional)

Prepare the Avocado Spread: Cut the avocados in half, remove the pit, and scoop out the flesh into a bowl. Add the lemon juice, a pinch of salt, and freshly cracked pepper. Mash with a fork until creamy but still slightly chunky. Set aside.

    Sauté the Mushrooms: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Cook the Mushrooms: Add the sliced mushrooms to the skillet and stir well. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.

        Add Flavors: Pour in the soy sauce and sprinkle with red pepper flakes (if using). Stir to combine, and cook for another 2 minutes to allow the flavors to meld. Remove from heat and season with salt and pepper to taste.

          Toast the Bread: While the mushrooms are cooking, toast the slices of sourdough bread until golden and crispy.
