2 ripe avocados

250g mixed mushrooms (e.g., shiitake, cremini, and button)

1 tablespoon olive oil

1 garlic clove, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 tablespoon soy sauce or tamari

4 slices of whole grain or sourdough bread

Salt and pepper, to taste

Juice of 1 lemon

Optional toppings: red pepper flakes, microgreens, or a drizzle of balsamic glaze

Instructions
 

Prepare the Mushrooms: Clean the mushrooms with a damp cloth and slice them thinly. In a medium skillet, heat the olive oil over medium heat.

    Sauté the Veggies: Add the minced garlic to the skillet and sauté for about 30 seconds, or until fragrant. Then, add the sliced mushrooms, thyme, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

      Add Flavor: Drizzle in the soy sauce or tamari, stirring to combine, and cook for an additional 1-2 minutes until the sauce has absorbed slightly. Remove the skillet from heat.

        Prepare the Avocado Spread: In a bowl, mash the ripe avocados using a fork. Add the lemon juice, salt, and pepper to taste, mixing until smooth but still slightly chunky.
