Mushroom And Spinach Lasagna

9 lasagna noodles

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

10 ounces button mushrooms, sliced

5 ounces baby spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

15 ounces ricotta cheese

1 egg

2 cups marinara sauce

2 cups mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

Fresh parsley, for garnish (optional)

Instructions
 

Cook the Noodles: In a large pot of salted boiling water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until translucent (about 3-4 minutes). Stir in the sliced mushrooms and cook until tender and browned (about 5-7 minutes). Add the baby spinach, dried oregano, dried basil, salt, and pepper, cooking until the spinach wilts. Remove from heat and let cool slightly.

      Prepare Ricotta Mixture: In a mixing bowl, combine ricotta cheese, egg, a pinch of salt, and pepper. Mix until smooth and well-combined.

        Layer the Lasagna:

          - Preheat your oven to 375°F (190°C).

            - Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.

              - Place three lasagna noodles on top of the sauce.

                - Spread half of the ricotta mixture over the noodles, followed by half of the sautéed mushrooms and spinach. Sprinkle with 1 cup of mozzarella cheese.

                  - Repeat the layering process – add another layer of marinara sauce, three noodles, the remaining ricotta, the remaining mushroom and spinach mixture, and another cup of mozzarella cheese.

                    - Finish by placing the last three noodles on top, covering with marinara sauce and the remaining mozzarella. Sprinkle grated Parmesan cheese on top for added flavor.

                      Bake: Cover the baking dish with aluminum foil (avoid touching the cheese) and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden brown.

                        Rest & Serve: Allow the lasagna to rest for at least 10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.
