1 cup semi-sweet chocolate chips

1/2 cup unsweetened cocoa powder

1/3 cup coconut oil, melted

1/4 cup pure maple syrup

1 tsp pure peppermint extract

1/4 tsp sea salt

1/2 cup crushed graham crackers (for crust)

1/4 cup finely chopped fresh mint leaves

Optional: Dark chocolate shavings for garnish

Prepare the Crust: In a medium bowl, combine the crushed graham crackers with 2 tablespoons of melted coconut oil. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of an 8-inch square baking dish to form a crust. Set aside.

    Melt the Chocolate: In a double boiler, melt the semi-sweet chocolate chips over medium heat, stirring occasionally until smooth and glossy. Remove from heat.

      Combine Ingredients: In a large mixing bowl, combine the melted chocolate with the remaining melted coconut oil, cocoa powder, maple syrup, peppermint extract, and sea salt. Stir until well incorporated.

        Add Mint: Gently fold in the chopped fresh mint leaves into the chocolate mixture.

          Fill the Crust: Pour the chocolate mixture over the prepared crust and spread it evenly with a spatula.

            Chill: Cover the dish with plastic wrap and place it in the refrigerator for at least 2 hours, until the chocolate is set.
