1 tablespoon olive oil

1/2 cup pizza sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup cherry tomatoes, halved

1/2 cup bell peppers, diced (any color)

1/4 cup red onion, finely chopped

1/4 cup black olives, sliced

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and place a cast-iron skillet or non-stick oven-safe skillet in the oven to warm.

    Prepare the Biscuits: While the oven heats up, open the can of biscuits and separate them. Lightly flatten each biscuit with your hands or a rolling pin to create mini pizza bases.

      Sauté the Veggies: In a medium pan, heat the olive oil over medium heat. Add the diced bell peppers, cherry tomatoes, red onion, and black olives. Sauté for about 3-4 minutes, until the veggies are slightly softened. Season with salt, pepper, and Italian seasoning.

        Assemble the Pizzas: Carefully remove the hot skillet from the oven (hot handle!). Arrange the flattened biscuits in the skillet, ensuring they fit closely together. Spoon a tablespoon of pizza sauce onto each biscuit, spreading it evenly.
