4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup cherry tomatoes, halved

1/2 cup bell pepper, diced (any color)

1/2 cup red onion, finely chopped

1/2 cup zucchini, diced

1/4 cup black olives, sliced

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 teaspoon garlic powder

Salt and pepper, to taste

Olive oil spray (for greasing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Tortillas: Using a round cookie cutter or a glass, cut out circles from the tortillas that are roughly 4-5 inches in diameter. You can typically get 2-3 circles per tortilla.

      Shape Tortilla Cups: Lightly grease a muffin tin with olive oil spray. Gently press each tortilla circle into a muffin cup, shaping it into a cup to hold the pizza filling.

        Mix the Veggies: In a medium bowl, combine the cherry tomatoes, bell pepper, red onion, zucchini, and black olives. Sprinkle with oregano, basil, garlic powder, and season with salt and pepper. Toss to combine.

          Assemble the Cups: Place a tablespoon of the veggie mixture into each tortilla cup. Top each with shredded mozzarella cheese, evenly distributing it among the cups.

            Bake: Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the cheese has melted and the edges of the tortillas are golden brown.

              Cool and Serve: Once done, remove the muffin tin from the oven and allow the tortilla cups to cool for a few minutes. Use a fork to gently lift them out of the muffin tin. Serve warm and enjoy!
