2 large russet potatoes, peeled and grated

1 small zucchini, grated

1 small carrot, grated

1/2 bell pepper (any color), finely chopped

1/2 onion, finely chopped

1 cup shredded cheese (cheddar or mozzarella)

2 large eggs

1/2 tsp garlic powder

Salt and pepper, to taste

2 tbsp fresh parsley, chopped (optional)

Olive oil, for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin with olive oil to prevent sticking.

    Prepare the Hash Mixture: In a large mixing bowl, combine the grated potatoes, zucchini, carrot, bell pepper, and onion. Mix well.

      Season and Bind: Add the shredded cheese, eggs, garlic powder, salt, and pepper to the vegetable mixture. Stir until everything is evenly coated and combined.

        Form the Nests: Scoop a portion of the mixture into each muffin cup, pressing down firmly to form a nest shape. Ensure the edges are slightly higher than the center to hold in fillings later.

          Bake the Nests: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the nests are golden brown and crispy.

            Cool Slightly: Remove the muffin tin from the oven and let it cool for about 5 minutes. Carefully run a knife around the edges of each nest to loosen them, then gently lift them out.

              Garnish and Serve: For added flavor, garnish with freshly chopped parsley. These delicious nests can be served warm or at room temperature, making them perfect as appetizers or a light meal!
