Ingredients

4 medium-sized ripe tomatoes

1 can (5 oz) solid white tuna, drained

1/4 cup plain Greek yogurt

1 tablespoon mayonnaise

1 tablespoon Dijon mustard

1 tablespoon capers, drained and chopped

1/4 cup celery, finely diced

1/4 cup red onion, finely diced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions

Prepare Tomatoes: Start by gently washing the tomatoes under cold water. Using a sharp knife, carefully cut a small circle on the top of each tomato. Scoop out the insides with a spoon, creating a hollow shell. Be careful not to puncture the skin. Set the hollowed tomatoes upside down on a paper towel to drain while you prepare the tuna salad.

Make the Tuna Salad: In a medium mixing bowl, combine the drained tuna, Greek yogurt, mayonnaise, Dijon mustard, chopped capers, diced celery, diced red onion, and fresh dill. Stir until all ingredients are well incorporated. Taste and season with salt and pepper as desired.

Stuff the Tomatoes: Once the tomatoes are ready, flip them back over and gently fill each hollowed tomato with the tuna salad mixture. Pack the salad lightly, so it stays in place.

Garnish and Serve: Arrange the stuffed tomatoes on a serving platter. Sprinkle fresh parsley on top for a pop of color and extra flavor. Serve immediately or refrigerate until ready to serve for a refreshing cold appetizer.

Enjoy: These mini tuna salad stuffed tomatoes make a great appetizer for parties or a light lunch. Dive in and enjoy the delicious burst of flavors!
