Mini Taco Lasagna Biscuit Cups

1 can (16.3 oz) refrigerated biscuits

1 lb ground beef (or turkey)

1 packet taco seasoning

1 cup refried beans

1 cup marinara sauce

1 cup shredded cheddar cheese

1 cup shredded Mexican blend cheese

1/2 cup sour cream

1/2 cup diced tomatoes

1/4 cup sliced black olives

1/4 cup chopped green onions

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with non-stick spray.

    Prepare Biscuit Cups: Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a round shape and place them in the greased muffin tin cups, pressing them down and up the sides to form cups.

      Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey) and cook until browned. Drain any excess fat. Add the taco seasoning and stir to combine, cooking for another 5 minutes.

        Layer the Filling: Spoon a dollop of refried beans into each biscuit cup, followed by a generous spoonful of the seasoned meat mixture. Then add a layer of marinara sauce.

          Add Cheese: Sprinkle shredded cheddar cheese on top of the marinara layer, followed by a layer of the Mexican blend cheese.

            Bake: Place the muffin tin in the preheated oven and bake for about 12-15 minutes, or until the cheese is melted and the biscuit cups are golden brown.

              Garnish and Serve: Carefully remove the mini taco lasagna cups from the muffin tin. Top each cup with a dollop of sour cream, diced tomatoes, black olives, and green onions. Garnish with fresh cilantro if desired.
