1 pound ground beef (or turkey for a lighter option)

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

2 tablespoons water

1 package tortilla chips (preferably small or scoop-sized)

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1 cup shredded lettuce

1/2 cup sour cream

1/4 cup sliced jalapeños (optional)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes. Add the ground beef and cook until browned, breaking it apart with a wooden spoon. Drain any excess fat.

      Season: Stir in the taco seasoning and water, mixing well. Let it simmer on low heat for an additional 5 minutes, allowing the flavors to meld. Remove from heat.

        Prepare Mini Cups: Arrange your tortilla chips in a muffin tin, gently pressing them down to create little cups. If your chips are too large, you can break them slightly to fit.

          Fill the Cups: Spoon the seasoned meat mixture generously into each tortilla cup, filling them about three-quarters full. Sprinkle a layer of shredded cheddar cheese on top of each.

            Bake: Place the muffin tin in the preheated oven and bake for about 10 minutes, or until the cheese is melted and bubbly.

              Add Toppings: Carefully remove the mini taco cups from the oven. Top each one with diced tomatoes, shredded lettuce, a dollop of sour cream, and jalapeños if using. Garnish with fresh cilantro for an added pop of flavor.

                Serve: Allow mini taco cups to cool slightly before serving. They're best enjoyed warm, but can be served at room temperature as well!
