1 medium zucchini, grated and excess moisture squeezed out

1/2 cup all-purpose flour

1/4 cup cornmeal

2 large eggs, beaten

1/4 cup grated Parmesan cheese

1/4 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

2 tablespoons fresh chives, chopped (optional)

Prep the Veggies: In a large mixing bowl, combine the sweet corn kernels and grated zucchini. Make sure to squeeze out as much moisture as possible from the zucchini using a clean kitchen towel or cheesecloth.

    Mix Dry Ingredients: In a separate bowl, combine the all-purpose flour, cornmeal, garlic powder, smoked paprika, salt, and pepper. Mix well.

      Combine Mixtures: Add the dry ingredients to the bowl with the corn and zucchini. Stir in the beaten eggs and grated Parmesan cheese until the mixture is well combined. The batter should be thick enough to hold its shape; if it looks too runny, add a bit more flour or cornmeal.

          Heat Oil: In a large skillet or frying pan, heat about 1/4 inch of vegetable oil over medium heat. Test the oil by dropping a small spoonful of batter in; it should sizzle upon contact.
