1 cup fresh spinach, chopped

1 cup mushrooms, finely diced (button or cremini)

1/2 cup finely chopped onion

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

1 cup ricotta cheese

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 pack of pre-made phyllo pastry cups (12 count)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes until they become translucent. Then, add the minced garlic, diced mushrooms, and chopped spinach, and cook for an additional 5-6 minutes until the mushrooms are tender and the spinach is wilted. Season with salt, black pepper, thyme, and red pepper flakes (if using).

      Mix the Cheese Filling: In a medium bowl, combine the sautéed vegetable mixture with ricotta cheese, half of the mozzarella, and half of the Parmesan. Mix thoroughly until well combined.

        Fill the Phyllo Cups: Place the pre-made phyllo pastry cups on a baking tray. Spoon an equal amount of the cheese and vegetable mixture into each cup, filling them generously but without overflowing.

          Top with Cheese: Sprinkle the remaining mozzarella and Parmesan cheese on top of each filled cup for that melty finish.

            Bake: Place the tray in the preheated oven and bake for about 15-20 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once baked, remove from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley before serving.
