2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, cold and cubed

1 cup buttermilk

1 cup fresh spinach, finely chopped (or ½ cup frozen spinach, well-drained)

1 cup feta cheese, crumbled

½ teaspoon garlic powder

¼ teaspoon black pepper

1 egg, beaten (for egg wash)

Optional: sesame seeds or poppy seeds for topping

Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well-mixed.

      Cut in Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Mix Wet Ingredients: In another bowl, combine the buttermilk, chopped spinach, feta cheese, garlic powder, and black pepper. Stir until well blended.

          Form Dough: Pour the wet ingredients into the dry ingredients, and gently stir until just combined. Avoid overmixing; the dough should be slightly lumpy.

            Shape Biscuit Bombs: Turn the dough out onto a floured surface and pat it into a rectangle about 1 inch thick. Cut the dough into squares (approximately 2x2 inches). Place a generous tablespoon of the spinach-feta mixture in the center of each square.

              Seal the Bombs: Fold the corners of the dough square over the filling, pinching to enclose. Shape them into a ball and place seam-side down on the prepared baking sheet.

                Egg Wash and Topping: Brush the tops of each biscuit bomb with the beaten egg. If desired, sprinkle sesame seeds or poppy seeds on top for garnish.
