1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

1 cup cooked sausage, crumbled (breakfast sausage works best)

1/2 cup shredded cheddar cheese (optional)

1/4 cup chopped green onions (optional)

Cooking spray or muffin liners

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). If you’re using silicone muffin liners, place them on a baking sheet.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

      Combine Wet Ingredients: In another bowl, whisk together the milk, egg, and melted butter.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, stirring just until the mixture is combined. Do not overmix; a few lumps are okay!

          Add Sausage and Extras: Gently fold in the crumbled cooked sausage, cheddar cheese, and green onions if using. Again, mix lightly to combine.

            Prepare Muffin Pans: Lightly grease a mini muffin tin with cooking spray or line it with muffin liners.

              Fill Muffin Tin: Using a small cookie scoop or tablespoon, fill each muffin cup about 3/4 full with the batter.

                Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
