4 mini sweet bell peppers (red, yellow, or orange)

4 large eggs

1/4 cup shredded cheddar cheese

1/4 cup cooked and crumbled breakfast sausage (optional)

2 tablespoons finely chopped green onions

1 tablespoon olive oil

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the mini bell peppers in half lengthwise and remove the seeds. Place them cut-side up on a baking sheet lined with parchment paper. Drizzle with olive oil, and sprinkle with salt and pepper.

      Roast the Peppers: Roast the peppers in the preheated oven for 10-15 minutes or until they start to soften but still hold their shape.

        Prepare the Filling: While the peppers are roasting, crack the eggs into a bowl and whisk them until well beaten. Stir in the shredded cheddar cheese, cooked sausage (if using), and green onions. Season with a pinch of salt and pepper.

          Fill the Peppers: Remove the roasted peppers from the oven and reduce the temperature to 350°F (175°C). Carefully fill each pepper half with the egg mixture, leaving a little space at the top as the eggs will expand while cooking.

            Bake the Breakfast Boats: Return the filled peppers to the oven and bake for an additional 15-20 minutes, or until the eggs are set and cooked through.

              Serve: Once cooked, remove from the oven and let them cool for a minute. Garnish with fresh herbs like parsley or cilantro, and serve warm.
